Reports a project to test and evaluate the impact of the Food and Drug Administration (FDA) guidelines on temperatures in display cases on the power use and performance of a multi-deck display case typically used in supermarkets for storing dairy products. These require potentially hazardous food to be kept at 41°F (5°C). This is 4°F (2.2°C) lower than the previous version of the code. Describes the test procedure, and presents and discusses the findings. Notes potential problems with product temperature variation between the top and bottom shelves and between the front and back of the shelves and between the opposite ends of the shelves.
